In the tradition of Irish whiskey, this dram is triple distilled. (Note that extra ‘e’ that’s also in line with Ireland’s whiskey.) Stormchaser is a sourced single malt from Sailor’s Home, a Limerick-based independent house named for the city’s 1856 Sailors’ Home and led by master whiskey maker Dr Jack Ó’Sé. It’s matured in virgin American oak and ex-bourbon, then split for finishes in Irish craft stout and Madeira casks before being married and bottled at 46% ABV, non-chill filtered. Triple distillation follows the classic Irish pot-still sequence—wash, intermediate, spirit—boosting rectification and copper contact for a cleaner, lighter new make prior to cask ageing.

A light, triple-distilled spirit (clean, delicate) can be overshadowed by expressive finishing casks (stout/Madeira), especially if the beer cask carried Brett-derived acids/phenols. The result is a tug-of-war: oak-derived vanillin/lactones try to add cream/vanilla while short-chain acids and volatile phenols push it into stinky cheese/unwashed clothes.

Food pairing: if it’s on the table, lean into the funk and tether it with umami and sweetness: blue-cheese crostini with honey, or grilled mushrooms with thyme. Otherwise, keep it simple: plain shortbread or oatcakes to mute the edges.

Production notes

Forty years on a label sets big expectations. Here, the story is less about wood fireworks and more about long marrying in a tired (refill) sherry butt that was asked to hold a blend together rather than change it.

Laid down to marry in 1998 and bottled in 2024, the cask seems to have acted as a neutral room: it rounded edges, softened peat to a whisper, and let the fermentation-led fruit (apple/pear, a touch of banana) do the talking. The musty, papery drift that appears on the nose reads like trace warehouse character rather than full-on sherry influence, and the short finish suggests the wood had very little left to give.

Most flavours are distillery character: peat from the malting process and lots of esthers that would have come from fermentation. An active cask would have added a bit more…especially have 4 decades.

Context + commentary

Living Souls is a new independent bottler from John Torrance, Jamie Williamson, and Calum Leslie, launched in late 2024 with a small first collection. Their 40-year blend is unusual not for its proof or price but for its method: the component whiskies were blended in 1998 and left to marry in a refill sherry butt, then bottled in 2024 at 45.1% ABV, without colour or chill-filtration.

Food pairing: Keep it light and unsmoked so you don’t swamp the delicate nose: thin slices of tart green apple, plain oatcakes with a soft goat’s curd or young pecorino, and a few unsalted almonds. A small spoon of acacia honey on an oatcake echoes the soft sweetness without tipping it into cloying.

Companion dram: Pour a younger, ex-bourbon Islay (10–12 years, ~46–50% ABV) alongside. The cleaner peat and brighter citrus/green-fruit will show you what this blend is missing in drive and finish. For a wood contrast, follow with a sherry-forward blended malt where the cask is clearly active; it’s a tidy A/B on how active vs neutral wood shapes both mid-palate and length.

Cultural note: “Marrying” blends in neutral oak is a long-standing blender’s practice: the aim is to integrate components, not add new flavours. Using a refill butt for decades keeps oxygen trickling in while the wood stays largely hands-off. It’s why very old blends can feel polished but pale—beautifully even on the nose, yet missing the push you might expect from their age.

Score / Verdict

Score: 70/100

Verdict: A bit of a whomp, whomp moment, but one that helps to prove that older isn’t always better. Flavour miracles happen in the cask, and while it can be nice to get distillery character, we were expecting more from maturation in this one.

Small-batch Ardbeg at its most civilised. Batch 7 of Traigh Bhàn is a 19-year vatting of ex-bourbon and oloroso sherry casks. Ardbeg keeps the malt’s phenol level consistent across expressions, but time does its quiet magic: 19 years lets a good chunk of those phenolics soften and some even bind to the cask char, so the smoke whispers rather than shouts. And their purifiers produce a more refine new make spirit. Label notes nod to lemon peel, coal dust, mint/eucalyptus, and a lick of salted toffee…and for once the poetry matches the glass.

Context + commentary

Like many peated expressions, Ardbeg uses green bottles because of the prejudice toward a light dram. But remember, a light liquid does not mean a dull one; in fact, maturation in an ex-bourbon cask allows other, more subtle elements to shine.

Food pairing: lean into the citrus-smoke duet. Lemon tart or posset works a dream; alternatively, salted-caramel dark chocolate lets the toffee and ash hold hands.

Companion dram: pour Ardbeg Uigeadail alongside. It's the house style turned up (bigger sherry, bigger peat), which makes Traigh Bhàn’s age-softened elegance even more obvious.

Cultural note: Ardbeg very nearly met the wrecking ball in the 1990s. Fast-forward and it’s a cult Islay classic with headline “committee” releases. Traigh Bhàn is the counter-argument to the hype: less theatre, more mastery.

Score: 95/100

Verdict: bonfire embers, lemon sherbet, vanilla hush..it’s a mellow-peat lullaby you’ll want to nurse by the fire and (begrudgingly) share.

Ben Nevis is a staple of the Highlands, licensed in 1825 and sitting just outside of Fort William. It may have closed for a tick in 1908, but new owners ramped production back up in 1955, introducing a Coffey still. Nikka (Japan) bought the distillery in 1989 and continues to run it today. This dram was distilled in 2011 and matured the whole time in one sherry butt cask. As a member of the Hepburn’s Choice range (blended from single casks or small batches), it comes from one of 880 bottles and has no colouring or chill filtration.

Context + commentary

The citrus hit of this lighter dram calls for a summer day with friends. As a simple sipper, it would make an amazing picnic companion for the adults as kids run off to play in the park. The vanilla, as it floats above the rest of the flavour and lingers, creates a comforting effect, inviting drinkers to share and reminisce.

Food pairing: Goat’s cheese with a honey drizzle for start, a comforting roast chicken with orange and thyme for a meal.

Companion dram: Aberlour 12 (Double Cask Matured) will bring in sherried raisin and richer nutmeg spice, contrasting the light orange-vanilla sweetness with deeper fruitcake notes.

Cultural note: With its bright vanilla and orange tones, this dram reflects a modern taste for lighter, approachable whiskies…heirs to the “lunchtime dram” once favoured by city merchants.

This limited-edition peated single malt is bottled just once a year, and it’s absolutely worth the wait. The balance of smoky peat and sweet sherry, along with the higher ABV, creates an almost creamy treat perfect for an autumn evening.

Production notes

The second bottling from the core range at Lagg Distillery. It’s named Corriecravie after a small hamlet northwest of Lagg, and it’s bottled only once per year. The first maturation takes place in bourbon barrels before it’s finished for 6 months in oloroso sherry hogshead casks, which come from Miguel Martin in Spain. It’s non chill filtered, and no colour has been added. Lagg’s first cask filling took place in 2019, the distillery itself a second site for Arran distillery.

Context + Commentary

This is exactly the whisky to sip as we slip from summer to autumn. The smoke is light enough to feel luxurious, inviting a chill in the air and daylight that draws to a close earlier but slowly. It tastes traditionally ‘islandy’, so imagine a sea view in the outer Hebrides, bundled in a wool blanket.

Food pairing: charcuterie board with spiced meats and a creamy French cheese. Don’t forget some dark chocolate with dried ginger.

Companion dram: Try with a Lagavulin 12 (cask strength) for a drier, coastal peat, citrus rather than stone fruit. Great for showing how different peat styles (coastal iodine vs. campfire).

Cultural note: Though distilled on Arran (an island off the north west of Scotland), this whisky is officially classed as “Highland” under Scotch Whisky Regulations. It’s a reminder of how the islands defy neat categorisation: island by geography, Highland by law, carrying a little of both identities in the glass.
